Denny’s Baconalia is Making a Return, Let’s Give Away a Gift Card
Today I was at Denny’s headquarters in South Carolina and tasting the second coming of Baconalia. I’d give you the scoop now, but I’m tired and need to sleep off the massive amount of bacon sitting in my belly.

Every year the last Thurs of Feb my family has our own holiday where we each prepare a bacon dish and judge them “Chopped” style. The winner gets a prize. Leap years we take the whole week and call it “Bacon Vacation”. It’s always fun to sample various gourmet bacons and see what each other comes up with for a dish.

Bacon got so overplayed in the last couple of years. I’m not the biggest fan of it originally and I like it in moderation so long as it’s with something else, but really, bacon desserts? Bacon doesn’t make everything better and more bacon is sometimes bacon overkill. I much rather have a bacon avocado sandwich with two slices of bacon much more than I would having it with five.

OMG I justed decided to go check out the new Baconalia menu at Denny’s this Sunday, will be a plus if I won this giftcard! I missed it last year (actually, I was able to try the Maple Bacon Sundae upon request at a very friendly Denny’s right outside of LA when I was on my road trip) so this time around I’ll make sure to have the Bacon and White Chocolate stuffed French Toast (mmmmmmmmm!). Can anyone vouch for their French Toast? Most diner French Toasts taste too leavened, too much like baking powder/soda. Hopefully the bacon will work its magic and hide it!

I cook up some bacon slices, then fry a thick slice of onion in the bacon grease, then put the bacon and onions on a bagel with cream cheese. Gloppy goodness!

I like bacon. I like bacon spaghetti. Here’s my recipe:
Ingredients: pound of bacon (the regular thin kind, fancy thick stuff is no good), pound of regular spaghetti, parmesan, italian seasoning, crushed garlic, black pepper, one egg (beaten). Crushed red pepper optional.
Cook up a pound of bacon. Drain it, but SAVE THE FAT!!
Chop the bacon into tasty half inch pieces.
Time it so your pound of spaghetti (al dente is a must for this) is ready to drain just as the bacon is done and chopped.
Dump the pasta back in the pot, put it back on the burner, dump the bacon in the spaghetti, and add about a half cup of the bacon grease. Mix it up.
Add some italian seasoning, lots of parmesan, and lots of crushed garlic, maybe 4-6 cloves (precook it for a little while in some bacon grease if you don’t like strong garlic flavor). Little bit of black pepper, and crushed red pepper if you like. Stir it up again.
Turn the burner back on to medium or so, and swirl that beaten egg in. Stir like crazy until the egg kinda coats the pasta and stuff, and you’re done. Sometimes I like to use two eggs.
Serve with a bit more parmesan.
